今代司 BLACK EXTRADRY 超辛口 純米酒
金の達人有志の会のお手伝いでもらった一本です。着色はあり、香りは良いエチル臭です。含むと、口切りと一時間後では印象がやや変わりますが、まずは強烈な辛みと苦味があり、苦味は後まで残ります。途中、若干の甘みが一瞬あります。酸味は全くありません。金達の試験では、口切りのお酒で無いことを留意すべきです。
辛さだけなら、じゃんげ、伝辛、よしのがわ辛口に匹敵しますが、各々、味の変遷が違うので、達人試験を受けるなら、これらの違いははっきりと区別出きるよう反復練習しましょう。
