This is a sake brewery that we receive every year as part of our hometown tax payment to Nagasaki Prefecture. This is a junmai-shu made from brand-name sake rice Yamada-Nishiki. According to the specifications, the rice polishing ratio is 65%, which is a normal percentage. The alcohol content is an easy-drinking 15%. The aroma has a soft koji aroma, as is typical of junmai sake, and there is no alcohol smell. The taste is light and dry, similar to that of Niigata sake. It also has a slight sweet component.
