Takachidai Junmai Daiginjo "Uonuma Ipponjime" for restaurants only.

This is a drink I had at "Kodama-ya" in front of Urasa station, a favorite restaurant of mine. It looks like a family restaurant, but the food is first class. I have been a regular customer for 20 years. They have a sake menu, but if you ask, they will serve you a sake that is not on the menu. This time, I entertained a photography teacher, so I first asked him to show me all the alcoholic beverages available in the restaurant.
At first I was thinking of Aka Echigo, but after seeing the sake that came out, I decided to go with it first. The price at the store is 3800 yen, a good price. The most important point about this sake is the sake rice used, which is a "restaurant only" version not available at liquor stores. Various sakes by Takachiyo Sake Brewery are available at the Kanazawa-ya Sake Shop in Minamiuonuma City, but the Ipponjiki version is produced in Minamiuonuma. Therefore, the "Uonuma Ipponjime" version is a very rare bottle.
The top aroma is beautiful, with a typical fruity aroma. The color is clear, unfiltered, but there is no ooze. It is slightly sweet but natural. There is no spiciness or bitterness, and it is what one would call a beautiful sake.
