We have obtained a hard-to-find sake in Japan that is a twin of Jyushiyo, Nikkaku, and Hiyoroki. It is a highly aromatic sake with low acidity, typical of Gohyakumangoku. It is priced at 1,700 yen. As is typical of ginjo-shu, the aroma is fruity, with hints of pear or banana. There is almost no coloration, and a wonderful fusion of sweetness, bitterness, and astringency with a little bitterness. It also has no acidity. There is a slight effervescence, perhaps due to its proximity to new sake. However, I am a little concerned about the lack of flaws and the fact that it is too honorable.
