Manotsuru Super Dry Junmai Namaizu Harusake.

Manotsuru is a sake from Sado Island. This time, we found a rare bottle at "Roadside Station Yunotani". It is an unbelievably dry sake. The specs list it as having a Sake Degree of +18. The super dry Takachi-yo was +15, so it was surprising that it exceeded that level. Moreover, it is a daiginjo.

The color is almost colorless and the aroma is not very distinctive. In the mouth, there is an impact of "spicy" and "bitter. When you taste it, it disappears like Sarashina soba (buckwheat noodles), which is exactly what one would expect from a daiginjo, but you do not feel the weight of the original sake. Once you get over the spiciness and bitterness, you feel the daiginjo character of 50% polished rice (like Otters 50). It is a light sake, but the alcohol content is 18.5%, as is typical of the original sake.

In a sense, it is a difficult sake, everyone knows that dry sake is very strong, but most sake that claim to be super dry are ordinary sake, and if you feel daiginjo after being numbed by the spiciness, you are advanced!
