This is an old sake from the Ayumasamune Sake Brewery in Myoko City. Although relatively expensive at 2,750 yen, the brewery has stocked more this year due to the popularity among regular customers. It is fire-aged and stored at room temperature. Although it is called koshu, according to the owner, it has been aged for five years. It is a sake that is in the delicate middle stage between matured sake and old sake. First of all, the color is not cloudy, slightly yellow but not dark. The aroma is a twisted aroma with no ginjo aroma. The taste is somewhere between aged and old sake, as per the specs. While it has the roundness, sweetness, and heaviness of an aged sake, there is also a certain amount of twist that makes it join the ranks of old sake. Maybe for enthusiasts, I recommend fresh sake for beginners of ayu masamune.
