The long-established Niigata sake brewery, whose style has become old-fashioned and declining, has recently released two new products in 45 years: Kawawa, in a blue bottle, and Omen, in a green bottle, to meet modern taste preferences. The original Koshino-Kanbai has been carefully preserved as the sake of the past. However, nowadays it has become a less preferred flavor. Now, the two new products mentioned above have changed labels and bottle colors from the original, but this is an ambitious work that has been released with the original label "澵" as a bottle with no compromise. One bottle at Aeon, 4,000 yen.
The coloring is slight, and the aroma is a bit of brewer's alcohol, and although it is a ginjo-shu, it does not have a ginjo aroma. The first sip has a hint of Koshino-Kanbai's original, unassuming flavor, but it gradually becomes more and more like this. It is supposed to be dry, but you don't feel it that much, and there is no sweetness, no bitterness, how should I describe it, but the balance is very good. It is difficult for me to distinguish it from "Kawaawaizu" and "Mister Mister", which are new series.
