Echino Kanchubai Type II Junmai Shu.

Echino Kanchubai Type II Junmai Shu.

This is a sake from Niigata Meisho of Ojiya, a well-known sake brewery. It is a new type of sake made to be drunk chilled and served in a wine glass. It has a slight color and almost no aroma, and has none of the alcohol smell often associated with sake. The taste is not too acidic and sweet. It disappears quickly and feels like a very light sake. In any case, it is a light sake. However, the alcohol content is exactly 15%, making it a masterpiece of summer sake.
