This is my first sake from the Tenzan Sake Brewery in Saga Prefecture. I had always thought that Kyushu was a place where good sake was hard to find due to its shochu culture. Well, the sake rice is from Saga Prefecture and the sake is freshly squeezed and unpasteurized. The color is almost clear and the aroma is fresh but not strong. The mouthfeel has the characteristics of freshly squeezed sake, with a slight fizziness and sweetness that gives way to bitterness. The aftertaste is clean, but unlike Niigata sake, it leaves a sweet taste.
