This sake is from Kawaba Village, Gunma Prefecture. This sake is made with a high level of care and attention to detail, with a 90% rice polishing ratio. The label even goes to the trouble of stating that no lactic acid or enzyme additives are added. That's what you get when you say "nama-moto" sake.

The taste is still acidic, but the acidity is elegant and there is little cloying taste. Low milling ratio rice tends to have a strong acidity, but I think it is well made.
