Hachikaisan Special Junmai Harusake Nama-Zume Kanazawa-yasan One Year Aged.

In this May, "Tokujun" Nama-zume is released every year as a summer sake. I was torn between buying this year's freshly brewed sake or the one-year aged sake on the shelf, but I decided to go with the "aged" version. The price was 4,000 yen for a bottle, including tax.

Now, the aroma is that of sweet yeast, which is typical of nama-shu, and there is no alcohol smell. Well, it is junmai sake. The color is easy to recognize, with a faint yellow tint, and comparing it with unaged sake is good practice for the sake test. The taste is refreshing, as is typical of summer sake, and the aging process has given it just the right amount of roundedness. It is a dry sake with a slightly bitter aftertaste that quickly fades away.
